This is a fabulous banana bread recipe because it is so easy to make and it comes out perfect every time. I often make it during weekends or when we have guests. Everyone seems to love it! The recipe can be altered to fit your personal tastes——>you can add in nuts, chocolate chips, etc., Yummy!

- 3 over-ripe bananas {as in the peels are black}
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup butter {or margarine} softened
- 2 eggs
- 2 cups all purpose flour
- 1 tsp baking soda
- 1 tbsp cinnamon
- 1 tsp vanilla {optional}
- nuts/chocolate chips {optional}
- Preheat oven to 350 degrees.
- Grease and lightly flour a muffin tin or 9×5 loaf pan.
- Cream butter and sugar until smooth {I use my hand mixer}.
- Beat in eggs and cinnamon.
- Mash bananas with a fork and then add into the mixture.
- Add flour, baking soda, and any optional ingredients–mix until combined.
- Pour into prepared pan.
- If baking using the muffin tin, bread is usually done in 30-40 minutes.
- If using loaf pan, bread may take up to 1 hour to bake.
- Remove from pan and let cool.
- Enjoy your yummy banana bread!

I love this recipe I my country we bake tons of banana bread I use nutmeg instead of vanilla and nuts and almonds instead of chocolate chips to make it, I have never tried to bake it as muffins. I love to keep the banana bread moist so as soon as I remove it form the pan goes in to film. Thank you I have to try the muffin pan
